Grapes:  80% Carricante 20% Catarratto

Farming:  Practicing Organic

Vineyard:  5 hectares of the northern slopes of Mount Etna (Randazzo & Castiligione di Sicilia) .

Vine Age:  20-40 years

Altitude:  600-800 MASL

Soil:  Volcanic

Winemaking:  Fermented in stainless steel.   Aged in stainless steel for 4 months with 30% of Carricante aging acacia barrels.

Tasting Notes:  Pear, pineapple flowers and mediterranean herbs.  Bright and savory.

Pairings:   Crudo, antipasti, fritto misto.
