Grapes: 85% Nerello Mascalese 15% Nerello Cappuccio
Vineyard: 5 hectares around the northern and northeastern slopes of Mount Etna ( Randazzo, Castiligione di Sicilia, Linguaglossa & Piedimonte).
Vine Age: 20-40 years
Altitude: 600-800 MASL
Winemaking: Fermented in stainless steel. Two weeks maceration. Aged 1 year in Slavonian & chestnut oak (30hl). One year in the bottle before release.
Tasting Notes: Tart red fruits and flowers. Elegant & savory, lingering minerality.
Pairings: Porchetta, squab, risotto.
