Vine Age:  25-35 years

Soil:  Clay with ancient volcanic influence.

Winemaking:  Fermentation in stainless steel. 6 months aging on lees.

Tasting Notes:  Chamomile flower and spice.  White fruits, pear & yellow plum.  Lingering minerality.  Structure built for longevity.

Pairings:  Rich stews & charcoaled white meats.
