Vineyard: A blend from the 5 Valpolicella Classico communes (Fumane, Sant’ Ambrogio, Negrar, Marano, San Pietro in Cariano).
Vine Age: 20-25 years
Altitude: 150–450 MASL
Soil: Loam, clay & limestone.
Winemaking: Manual harvest early October then dried until January. 30 day maceration then aged in Slavonian oak for 18 months. Additional aging in bottle for 6-8 months.
Tasting Notes: Intense dried fig, cocoa and herbs. An impeccable balance between elegance and structure. Mature and complex with a persistent finish.
Pairings: Braised meat and aged cheese.
