Vineyard:  Vineyards in the hamlet of Jago (Valpolicella Classico).

Vine Age:  20-25 years

Altitude:  200-250 MASL

Soil:  Loam, clay & limestone.

Winemaking:  Manual harvest in October, dried 4 months in “fruttaio”.  Pressed in January, maceration 35 days.  2 years in Slavonian oak.

Tasting Notes:  Vanilla, spice, dried fruit and tobacco.

Pairings:  Grilled meats.
