Importer Notes:  Referred to as a “Super Valpolicella” as it’s made similarly to Amarone, but is only designated as a Valpolicella  Classico Superiore.  

Grapes:  40% Corvina – 25% Rondinella – 15% Corvinone – 15% Croatina – 5% Oseleta

Farming:  Sustainable

Vineyard:  Vineyards in the heart of Negrar (Valpolicella Classico).

Vine Age:  15-25 years

Altitude:  250-450 MASL

Soil:  Loam, clay & limestone.

Winemaking:  Manual harvest in October, dried 40 days in “fruttaio”.  Pressed and macerated for 15 days then aged in Slavonian oak for one year.

Tasting Notes:  Complex and spicy with ripe cherry notes.  Warm and persistent.

Pairings:  Braised beef.
