
La Montina ~ Franciacorta ~ Extra Brut
Importer Notes: Extra Brut displays a drier side of Franciacorta with a very minimal residual sugar content of 3.5g /l.
Grapes: 80% Chardonnay & 20% Pinot Nero
Farming: Organic
Vineyard: A blend of vineyards in several provinces within Franciacorta.
Vine Age: 10-25 years
Altitude: 200-500 MASL
Soil: Morainic (ancient glacier melt)
Winemaking: After the initial fermentation and aging the wine is blended with a previous vintage and bottled with the liqueur de tirage (raw sugar cane & yeast) where it undergoes its second fermentation in the bottle and rests for 2 years on the lees. After disgorgement a blend of still wine and raw cane sugar is used for the dosage. It is made in an Extra-Brut style with less than 4g/l of residual sugar.
Production: 500 cases (9l)
Tasting Notes: White flower, apple, brioche. Bone dry with a fine perlage.
Pairings: Fried fish & mozzarella.
