Vineyard: Vineyards in Collio.
Vine Age: 20 years
Soil: Ponca (marl-sandstone).
Winemaking: Native yeast fermentation in open top barrels without temperature control. After two weeks of skin contact the wine is transferred to Slavonian oak (600l) and ages for 14 months on the lees. Unfiltered, minimal sulphur only at bottling.
Tasting Notes: Wildflower, spice, bitter almond. Lingering minerality, complex and medium bodied.
Pairings: Chicken with cashews and ginger.
