Importer Notes:  Primitivo del Salento –  the southern stretches of the heel of the boot.  Grapes are grown on vineyards sloping towards the Ionian sea.  

Grapes:  100% Primitivo

Farming:  Sustainable

Vine Age:  10-25 years

Altitude:  50-80 MASL

Soil:  Calcareous clay.

Winemaking:  Fermentation in stainless steel, one week maceration.  9 months aging in glass lined cement.

Tasting Notes:  Ripe strawberries, softly floral, velvety tannins.

Pairings:  Pulled pork, caponata.
